Preheat the oven to 400F. In a large bowl, toss the potatoes, onions, corn, 11/2 tablespoons olive oil, and 21/2 teaspoons Old Bay. Transfer to a large sheet pan and roast for 20 minutes. Add shrimp to the sheet pan. Broil for 7 minutes, until the shrimp are opaque and cooked through. Variation Tip: If fresh corn is not in season, use frozen and thawed corn on the cob or kernels.
