Transfer the skillet to the oven and roast until the carrots are caramelized, tender, and browned, 20 to 25 minutes. Stir the carrots halfway through. 4. In a small bowl, stir together the yogurt and lemon juice until combined. Season with salt and pepper. Drizzle the yogurt sauce over the roasted carrots, sprinkle with the chopped pistachios, and serve.
